Meet Sandy Speich with Hoards Dairyman Farm Creamery

Meet Sandy Speich with Hoards Dairyman Farm Creamery as she talks cheese, cultures and their herd of cows. We will also do a Virtual Cheese tasting with Sark, Belaire, Governor’s Select Cheddar, and Gouda.



Sandy Speich has been in the cheese industry for over 35 years, she started working in the lab working with enzymes used in cheese making. From there she moved into using the enzymes to product desired flavors in mainly Italian style cheese. I also working on blending cultures and enzymes to accelerate the flavor development in cheddar cheese. Sandy worked as a tech service rep helping cheese makers with their cheese making skills and she has been with Hoards for almost 4 years.


Hoards Dairyman Farm has a herd of 500 Guernsey cows located in Fort Atkinson, WI and the farm was started in the late 1800’s. Some of the lineage of the cows currently located on the farm can be traced back to the original herd. The milk from the cows is used to make the cheese currently being sold.

Belaire: Port Salut-Style Cheese

Our Belaire, Port Salut (POR sa-LOO) -style variety is an exquisite, mild, and classic cheese that’s easy to eat and will quickly become one of your favorites. Its creamy, subtle flavor and soft texture make it an ideal cheese for formal occasions or a Sunday afternoon on the patio. Belaire’s welcoming pale yellow interior is highlighted with a distinctive bright orange rind.

Sark: Triple Cream Butterkäse Cheese

Creamy, buttery, mild and versatile are words that quickly come to mind when describing our Sark, butterkäse cheese. Named for the channel island of Sark, this golden delight’s origin is in the alpine region of Germany and Switzerland but it knows no borders today. Our rich Guernsey milk gives this mild cheese a near decadent melt-in-your-mouth creaminess.


Gouda: 6 Month Old

This 6 month old Gouda will be a welcome addition to your next cheese board and you’ll also find it melts beautifully, opening up endless possibilities for dining and entertaining. Very few wines will miss when paired with our Gouda, but try a Sauvignon Blanc, Riesling or even your favorite champagne to start. For beer, an ale is a sure bet. Try serving on a cracker with a small wedge of pear or apple. Or slice a baguette and melt your Gouda over thin sliced tomatoes and top with a sliver of capicola or Canadian bacon to experience a little piece of cheese heaven on earth.

Gouda was developed centuries ago in the southern region of the Netherlands and is known for its solid texture and complex character. Young Gouda starts out with an aromatic and sweet, caramel-like flavor that becomes more savory and nutty with age.


Governor’s Select Cheddar

Is there a cheese more universally known and loved than cheddar? Probably not, but some cheddars excel in flavor, texture and creaminess more than others. Our naturally golden and exceptionally creamy aged Governor’s Select cheddar highlights the special qualities of our farm’s Guernsey milk.

Worthy of carrying our Governor’s Select seal, this cheddar honors our founder and former Governor of Wisconsin, W.D. Hoard. The Governor, as he was affectionately called, established the Hoard’s Dairyman Farm in 1899, and today descendants of his original Guernsey herd help us bring you this remarkable cheese. Every slice you’ll enjoy of this Governor’s Select cheddar reflects the vision and spirit of W.D. Hoard.
