Wild Mushroom Soup with Chloe Merlot


It is starting to get cooler and it's a great time to a rich and robust soup. This is one of my favorite recipes and it includes the fantastic Vermont Creamery Crème Fraiche perfect as the main ingredient in the soup and also as a classic swirl for the presentation.


It's an easy recipe and I get asked a lot in my classes, can I substitute the Crème Fraiche, my answer is no. The Vermont Creamery Crème Fraîche can take the heat of the soup and add that wonderful tang, that really makes this soup so good.
