Cheese Pairing – Sequatchie Cove Creamery Walden (Brie Style)

Sequatchie Cove Creamery Walden, which is Sequatchie Cove Creamery’s newest addition to their line and their first foray into making cheese with pasteurized milk. These little half pound rounds are everything we want out of bloomy rind cow’s milks- a thin, mildly-mushroomy rind encasing a pudgy paste that is not too far off from eating straight-up butter.

Experience the intriguing blend of rye whiskies with a touch of rum, balancing our signature rye spice with a subtle Caribbean sweetness.

Cheese Pairing – Sequatchie Cove Creamery Bellamy Blue & Shakerag Blue

Sequatchie Cove Creamery Bellamy Blue, a smoked sea salt rubbed raw cow’s milk- the lovely folks at Sequatchie utilize milk from their primarily Jersey cow (high butter fat producers!) herd to produce this beautifully complex natural rinded blue. 

Sequatchie Cove Creamery Shakerag Blue is Sequatchie’s fig leaf wrapped blue. After they form these dense, buttery wheels, they are pierced to allow for blue mold to develop as well as wrapped in local fig leaves. While fig leaf wrapped cheeses have been produced for centuries, Sequatchie Cove Creamery goes an extra step by soaking the leaves in local whiskey. The result is an extraordinary combination of buttery richness, earthy spice, and intense fruitiness.
