Friesago is a semi-aged sheep milk cheese with a dense texture, pleasantly mild flavor and a slightly nutty finish. A multiple ACS award- winner — a 2017 First Place Winner—Friesago is versatile as a table cheese and as a cooking cheese. Called a “must try” by Food and Wine magazine! Friesago wheels average eight pounds.
Big Woods Blue is a full-flavored sheep milk blue cheese. Called by many one of the best blue cheeses in the country, Big Woods Blue blends spicy notes of blue with the creaminess of sheep milk for complex flavor. A 2017 first place ACS winner, Big Woods Blue has been widely praised by food writers nationwide and was a Culture 2012 centerfold. Big Woods Blue wheels five—six pounds, wrapped in foil
Morcella is a soft-ripened sheep milk cheese with morel mushrooms. Made in small batches with only spring and summer milk, Morcella is a creamy, earthy cheese with a mottled bloomy rind. Like the morel mushrooms it is named for, Morcella is seasonal. Morcella wheels are approximately two-three pounds.
Sogn is our newest cheese, an all-sheep milk Tomme style with a rustic natural felted rind. Sogn is a self-pressed cheese with semi-soft, mild interior with light grassy notes that contrast with the earthy rind. Sogn wheels are approximately four pounds. **Limited Availability**
